And what is Sicily without its fabulous foods? I was raised on traditional Sicilian foods, and Caponata is a favorite from my childhood. Thanks to my friends, Rosy and Eugenio, and my blend of high-quality ingredients, I have recreated my mother’s recipe for creamy caponata, and I am able to share this taste with you! My Crema di Caponata is a versatile creamy eggplant spread that can be used as a filler for ravioli, in antipasto, as well as in meat and pasta dishes.
